Low Carb Deep Fried Cauliflower





2 eggs beaten
 

Add about a nice tablespoon of flour. It

doesn't have to be an exact measurement. 


Mix flour with eggs then add cauliflower. 


Mix well to coat all the cauliflower. 


Add to a hot pan with about 1/2 in 

oil....about 300 degrees...fry til golden 

brown
 

 So simple




Its very simple. 


One of those things you really can't mess

up. 


If using frozen, thaw the cauliflower out so

it sticks to the egg mixture better.

Low Carbohydrate HOBO DINNER

LOW CARB HOBO DINNER

  • 1/4 pound ground beef
  • 1 green pepper, sliced
  • 1 pack of mushrooms, sliced
  • 1/2 chopped onion
  • 2 T. butter
  • 1 sheet heavy-duty aluminum foil (18 inches x 13 inches)
  • Salt  and pepper to taste
  • Shredded cheese {optional}

To begin, spread out a sheet of tin foil. Don’t use just ordinary tin foil. You need heavy duty foil. The last thing you want is for the foil to rip and leak your food or juices while cooking.If you do not have the heavy stuff use two layers of the regular foil.

 Form your meat patty. I like to make mine kinda thick, but it is all in your preference. 

Season your patty with garlic salt  and pepper 

Top your pattie with assorted low carb veggies, cut up and peel any that need it. You can customize your own any way you want. Put 2 large pats of butter on the top of the whole mix...Sometimes I use broccoli and cauliflower then add cheese just before serving....today I used mushrooms, green pepper,  and red onion ...



Fold your Hobo dinner up...I like to pull the 4 corners together, and then scrunch all the seams that are open together. 



Now you have 2 ways to cook the hobo dinner. In the oven or on the grill. 
In the oven add your hobo dinner onto a baking sheet and put into a preheated oven at 350 degrees and cook for 45 minutes. 
On the grill, again make sure the grill is preheated. Then cook for 30-40 minutes.
Open your dinner carefully..the steam can be brutal!!!
Top with chesse...ENJOY!!

Ultimate Low CARB Grilled Cheese

This might be my favorite comfort food that is easy and quick to fix...

I am lucky enough to have an awesome cheese factory down the street from my house {Widmer Cheese Cellar }that makes a creamy oh so gooey mild brick cheese that melts like a dream. 

You may use any cheese you like as long as it is not processed it is naturally low in carbs.

I use the low carb bread , a bit of mayonnaise, and fresh sliced Roma tomatoes....and real butter...Oh ya... 


Assemble your sandwich and fry on a low heat with a covered pan to make sure all that cheese melts....

low carb DUMPLINGS



INGREDIENTS:
3/4 tsp. baking powder
1½ T. glucomannan powder (Konjac powder)
1½ T. oat fiber
1 tsp. Mrs. dash
1/2 tsp. sea salt
¼ c. +2 T. water
1 extra large or jumbo egg, beaten


DIRECTIONS:   
Beat the egg in a small bowl with a fork. 
 Add the water and beat until well blended.  
On a paper plate or in another bowl, mix the dry ingredients well.  
Slowly sprinkle the dry ingredients into the wet, stirring with a spoon.  
Fold the slowly thickening mixture over and over itself until it eventually turns into a thick, almost dry dough.
Then, using a teaspoon, dip 1″spoonfuls of the dough into your palm. 
Roll them gently in your palms into a ball shape and set on wax paper
Let sit for 15 minutes
Drop the dumplings into boiling broth or soup.  
Cover with tight lid.  
Reduce heat immediately to medium. 
 Set timer for exactly 10 minutes . DO NOT LIFT THE LID or disturb the pot during cooking.  
After 10 minutes  They’re done!

Low Carb French Toast


This Low Carb French Toast deserved it's own post because it's JUST THAT GOOD! Seriously you guys...french toast! In the low carb world, having this as a breakfast option is just heavenly!



This is the bread I use...you can get it at Walmart.
6 carbs isn't bad if you are using it as a vessel to get more protein. 
Sometimes I just have to have bread, and this stuff is excellent!

2 eggs
1/2 tsp.vanilla
1/8 tsp.cinnamon
3 slices low carb bread
3T. butter
sugar free maple syrup

In a bowl, whisk together eggs,vanilla extract, salt, and cinnamon.

Melt 1 tablespoon butter in a large nonstick skillet or griddle over medium heat

Dip each slice of bread in the egg mixture for 30 seconds on each side. 

Place in the skillet. Cook for 2-3 minutes on each side until golden brown. 

Transfer to a plate and keep warm. 

Add more butter to the skillet or griddle, if necessary, and repeat with remaining bread. 

Serve with sugar free syrup and or whipped cream{not cool whip}.

Low Carb Marinated Deep Fried Chicken Wings {ZERO CARBS}

These chicken wings are so very crispy, you will never miss the batter! The key to success is frying them twice.

  1. Brine wings and let refrigerate overnight.{8 cups water 1/2 cup salt}I also add  fresh onions and garlic if I have it on hand.
  2. Preheat deep fryer to 300°F ( 275°F is even better)
  3. dry wings thoroughly with paper towels. Let wings sit at room temperature for 10 to 15 minutes.
  4. Fry wings for 15 minutes at 275°F or 12 minutes at 300°F. Be sure to not overcrowd .
  5. Remove wings from fryer and place on paper towels to cool, at least 30 minutes.
  6. Preheat deep fryer to 375°F (preferably 400°F if fryer can go higher)
  7. Fry wings until crispy
  8. Toss in sauce.
